To be honest, it is one of the simplest meals and yummiest food item I have ever prepared. I cook just like a regular fried rice, and replace rice with quinoa. THAT’S IT! What’s for Lunch Today?

Last night after a long day of work, running errands and studying for my finance class, I had just enough energy to whip up a healthy lunch. I have found that it is quite easy to just go to bed without preparing a good lunch for the next day, and then hastily grab whatever easy and unhealthy food I can lay my hands on, and consume that for lunch. But just an extra bit of preparation and pushing myself the night before, keeps me happy and healthy the next day 🙂 So here is what I am going to have for lunch today –

Sweet, Crunchy, Yummy, … Breakfast!

I am extremely not-creative when it comes to making breakfast interesting. Like everyone else, mornings are crazy times for me too, trying to get myself out the door. That does not usually leave me with enough time to prepare an extravagant meal. But the truth is, one does not have to. Power of Organic – The Gerson Diet

Couple of days back, while surfing for movies on Netflix, I happened to come across the documentary, “The Gerson Miracle”, and I must say it was an eye opener. Although there are speculations around the effectiveness and practicality of the Gerson diet in curing a terminal disease, this documentary made me believe that it is definitely a proactive step towards preventing one from happening.

Seriously! What Can We Eat?

This question has been bugging me for quite sometime now. I am one week into my extremely clean diet without workout challenge. And I must say, I’ve been successful in losing those tough pounds that I had been trying to for quite sometime. But, eating clean is not easy. The not easy part is the constantly coming up with ideas and searching for good healthy items. My weekly grocery shopping time just doubled, and so did my grocery bill! But it is something I am willing to let go for my health. But at the end of a few days, its more or less annoying.

The other issue is that the more health articles I read and youtube videos I watch, the bigger my list of “what you cannot eat” gets. Everything I used to love eating, has now been moved to the “cannot eat” list, leaving barely a few items on the “you can eat” list. So now I have to find ways of being creative with those few items along with the craziness of work and school! Go time management! However I have found a way to make my eating habits fun, and here’s what I do:

Maintaining Weight Without Workout

Sounds weird right? How can one possibly stay in great shape or even maintain without a daily dose of exercise? I used to think the same until the time I couldn’t workout anymore. For two weeks I suffered a back injury which made me incapable of doing any exercise whatsoever. It was hard enough to sit and the only time I felt good was when I would lie down. I had been showing symptoms of sciatica.

Knowing the fitness freak that I am, it was not a surprise to find me worrying about – “How am I going to workout now? How will I maintain myself? What will I do if I gained weight?”. All the negative thoughts began consuming me until I decided to look at my situation differently. I told myself, “Pallavi, you have been working out way too much and your body is asking for some break. You could use this time to focus on other aspects of fitness and staying healthy – diet.”. And I immediately started researching, more than ever, about foods I could eat to give me energy, but at the same time help me keep the pounds off. I went on some serious grocery shopping and revamped my refridgerator. Here are my 8 super foods I heavily integrated into my diet:
